Dragon's Dogma. Every character and pawn I've made have been unique, from their combat abilities to their "personalities". The leveling system is surprisingly deep and flexible so it's really hard to replicate a build point by point because you'd have to do very specific leveling paths with each class.
Pawns on the other hand, are influenced by your gameplay choices so they never end up behaving in the same way than other pawns. They can be customized with the inclination system to make them do what you want... almost, but I enjoy more just letting them be whatever they want to be.
