Actually this is really on-character for Dutch. No amount of money would have ever been enough for him. At Beaver Hallow they had about 49k in the cave. That's more than enough to fuck off and hide somewhere. The "one more big score" is just another line to keep everyone on the hook working for Dutch. He thrived in the chaos and power.
