I'll go first: playing with other people in multiplayer who are geographically close to you would be very fun.

If it's a single player then I expect every cutscene, conversation, exposition, etc to be pausable.

Looking at you Baldur's Gate 3.

Honestly, BG3 is the least of my problems with this. You know the game that really has this problem? FFXIV. There are cutscenes (or worse, series of cutscenes with no actual pauses between them, just momentary breaks that pass automatically) that go for more than half an hour. Can you skip them? Usually, but then you've missed out on a massive chunk of story.
