Chicken tacos with onion, cilantro, queso fresco and a bomb ass tomatillo salsa that my partner made. Mexican rice and black beans; the Mexican rice was from scratch and the beanises were canned but I typically do pinto beans from scratch as well.

Mexican rice is super easy!

  • Add oil to a hot pot, pour in your dry rice.
  • Stir until golden
  • Add chopped tomato and onion, 1/3 or half a red bell pepper is optional
  • Stir in powdered bullion and coat rice and veg (typically Knorr powdered chicken bullion but you can use Veggie bullion too)
  • Add water, bring to a boil
  • Turn heat to low, put lid on pot, cook til done
