if you can find it, chicken of the woods mushrooms work as a damn good substitute for not just chicken but pretty much any kind of meat depending on how you prepare it
i like to blend it and season it with cumin (and other things you'd use for taco seasoning) for tacos, and it's honestly a lot better than ground beef ever could be
