Final Fantasy Tactics. After softlocking my (only) save file at the Wiegraf fight I tinkered around a bit on a new game and discovered I could just make my units beat the shit out of each other and heal each other over and over to grind levels easily. Made a party of lvl 99 super gods and absolutely demolished that game. Still one of my all time favorites.
