Dang, that sounds incredible! I'd make a brown butter cookie flavored ice cream with chocolate covered crunchy cookie bits.
Gotta share this ice cream I recently grabbed called Jeni's. They don't have exactly what you described but the 'skillet cinnamon roll' is soo close. It definitely got me hooked, the flavors I've tried so far are wildly accurate.
I love when squirrels use their tail umbrella, it's super cute how it fits right over them.
