Other than that, I've played a lot of genshin impact lately, the only problem being that game is heavily influenced by China video game laws to limit you from playing too much....
Other than that, the new Balders gate looks like it would have some decent replay value

Genshin Impact. Start a new account and you easily hand almost a year of stuff to do.
The Witcher 3, elder scrolls online, any looong game with a lot of quest, or league of legends if I want to kill myself between a few months
VRChat. Can still socialize and stuff like that. There's no mention of what food/drinks you're allowed, so I'm going to assume it would be the same as what you normally get. So I'd just play VRC, meet with friends in there, do drinking night, explore, play some minigames...
Heck, during the first lockdown when I was jobless for a year I basically DID play VRC every waking moment outside of groceries and showers.

If I have access to Mods and maps than Minecraft 100%. At this point Minecraft is becoming an engine.
Oooh that's a tough one. I don't know if I could only play one game for a year. I play all sorts of games and find it difficult to only play one game for extreme periods of time.
If I were to try, I'd probably pick a super heavily modded Minecraft pack, Civ V, or Tabletop Simulator.
Second life, the PC in my S L house has full internet access.

Or maybe Sims 2. That's been my go to for years and years. With mods and cc, of course. I could probably even do Sims 4 with my murder mods.
