STALKER: Anomaly (+/- GAMMA).
I absolutely loved the original Stalker series and even though I pirated it at the time, as soon as I had my own money I bought it to support the devs (which I later found out had closed shop).
Those are really underrated games and the appearance of Anomaly which is a sort of free stand-alone mod with an improved engine was the cherry on top.
I think STALKER 2 has some big shoes to fill and I hope it won't feel meh due to the high expectations I'm placing on it.
I have a few hundred hours in Hunt: Showdown and GTA Online. Recently, it's Starfield.

Phantasy Star 1 for sega master system (before Genesis?
It isn't a sandbox as most examples here. But for me it is persona 5 or fire emblem three houses. So much content in those games and even after finishing them 4 time you still find something new.
Division 1 - Survival mode
I just downloaded the update to Echoes. I’ve actually missed a couple more updates if I’m being honest. I can’t wait to get back into NMS. I got it when it came out and despite the naysayers, I absolutely loved the game from the get go.
Just started my NMS journey about a week ago and I can already tell this might be up there with my top 5.
10/10 a hill I will happily die on. I have played it through several times and have clocked over 400 hours with 300 of those being on one save. I have it at the tippy top of my game list forever. It never gets boring. It's harder to find something else to play instead.
Slay the spire I go through multiple phases of planning nothing but then take a break for a few months
Skyrim. It was my first western RPG and for better or worse set the standard by which I judge RPGs and open world games. Lots of games do things Skyrim did but better but no one brings it together the same way as Skyrim and previous elder scrolls games.
