I'm going to get a lot of down votes for this, Genshin Impact I just keep going back to it for the frequent updates and new stories and characters.
Mass effect, its just such a rich and real feeling world that I cant help but go back and complete another playthrough every couple years.
I cannot believe I haven’t seen “Hollow Knight” in this thread yet. It’s so good, and for being a 2d platform I can’t quit. I have put hundreds of hours in. As a middle aged dude, it gave me something to play and bond with my children over.

Super Metroid: just so well done, the best of the Metroid games. Nothing has come close in exploration, bosses, etc.
Phantasy Star IV: always the first game I pick up after January 1. The story is excellent, and it did the whole “main character dies” beat years before Final Fantasy VII.
Heros of Might and Magic 3. Haven't played it for the last year since the computer that housed it is down.

Tearing giant space ships apart is just so soothing.
World of Warcraft, it's not perfect, but it's a great game to do a variety of things to relax and forget about the real world lol
