I'm no Luddite, but the idea of a "bread machine" has always seemed wrong to me. A machine half the size of R2D2, that's half mixer, half oven. And they "recommend" bespoke flours and mixes that demand obscene markups. All to produce mediocre loves.

Anyone can do better with basic equipment and cheap supplies. But not everyone will do better and that's fine. It's just that you could get bakery fresh delivered for like a year before you'd approach the upfront cost of those monstrosities.

They absolutely don't require bespoke flours and mixes. Yeah, they sell those, but your standard bread recipe will work just fine. I routinely make this amazing loaf of bread using a slightly altered version of a recipe for sub rolls from Ethan Chlebowski It works freaking perfectly. Just about any bread recipe works great. The biggest downside to the break maker is the holes in the load from the paddles, and that's sorted by just setting your machine manually to knead, and then remove the paddles before rising, and then setting bake time manually. Sure, slightly more work that one button, but if you don't mind paddle holes, just say fuck it and do a one button loaf instead.

A good well made and expertly created french baguette is holy manna from heaven.

A loaf of cheap ass Wonder Bread is basically Styrofoam and just as nutritious
