With Plasma 6 I can now edit my screen brightness from my toolbar, but I don't see the option to schedule it like the Night Light. Is there a way to do so?

No idea, if there's a GUI to schedule it, but you seem to be running Arch, so presumably you won't have a problem with scripting.

This command works for me on Plasma 5 to set the brightness:

qdbus-qt5 org.kde.Solid.PowerManagement /org/kde/Solid/PowerManagement/Actions/BrightnessControl org.kde.Solid.PowerManagement.Actions.BrightnessControl.setBrightness 123

Presumably, you need qdbus-qt6 or just qdbus, I don't know.

Well, and then just stick that in two cron jobs with different values in place of 123.
