My Mom says it does the same to her. Then she eats Dorito chips or uses a seasoning in it that has MSG and nothing happens. When I point that out she is still convinced that it gives her migraines and maybe those things just don’t have enough of it.

Same with my wife and I put MSG in some stuff that I make and she never complains but trust me, I know when she gets headaches or migraines. Not that I did it on purpose. It came up when she saw me bring in 2 lbs. of it and I'm just thinking to myself that she apparently has no idea that I use it somewhat commonly.
FWIW, I get a seriously intense headache precisely 9 seconds after eating a large pinch of MSG (because it's so tasty). It completely goes away 10 seconds later. I have no doubt it can cause headaches (in at least some people), and everyone denying it looks ridiculously sanctimonious to me.
I bet there are some self-delusions about these headaches, but they're not 100% fake. You're being just as foolish denying them as the people who are 100% sure they're all real. Reactions can differ from person to person.
