Is it normal to just... fall off, and not be as good at gaming? Because I feel like I've been getting worse for a while now.

I’m 41 too and my skill in FPS games is like an old wine. You just can’t be bad. Yeah reaction may be slower little bit, but it’s totally normal as life takes your time on the family and social things
