Is it normal to just... fall off, and not be as good at gaming? Because I feel like I've been getting worse for a while now.

I'm 43. I play games for the stories more so than anything now. If ot has a story mode, I play it on that setting. Otherwise it's easy or normal. I have no interest in spending hours trying to beat a game on a harder difficulty.
