Getting the following error every time I try to upload an image anywhere on the site:

SyntaxError: Unexpected token '<', "<!DOCTYPE "... is not valid JSON
    at parse (<anonymous>)
(anonymous) @ client.js:1

Is this a site wide issue or something I could fix?

There's a size limit of 100kb, it needs a more explanatory error though.

Is that going to change? 100kb seems quite low

I think the idea behind a low limit is to push people into linking to image hosting sites instead of hosting a ton of media on here.
I too would prefer images to be hosted locally, but I get that storage and associated costs can snowball pretty quick with something this big.
The 100kB limit should be OK for avatars and banners, which can't be hosted elsewhere.
Hopefully, it can be bumped a bit higher in the future.

Honestly, no idea. My account is mostly focused on crafting so I share a lot of photos of projects, it would be handy, but I completely understand that letting us upload and store images would significantly increase the resources needed for the server. Luckily it's easy to add images hosted elsewhere.

I think Sunaurus did say he'd look at potentially upping it eventually, but when that might be or whether it's even going to be feasible I couldn't say
