Hey! I recently bought the iPhone 15pro and when I use the „focus“ in the camera App by tapping with my finger on the screen a „f“ appears in the corner. I can activate it, but I can’t find out what for. It looks like the sign for „camera aperture“ (I don’t know if this is the right word, it’s „Blende“ in German). What does it do? I didn’t find anything on the apple help pages.

It’s camera aperture. Smaller numbers mean a larger aperture that lets in more light, bigger numbers mean the aperture is smaller and lets in less light

The iPhone doesn't have an adjustable aperture. There is no change to the amount of light being let in.
