I had read that some countries governments have access to app users shared data despite what it says under app details in Google Play Store.

I have some really good apps that I think I'll probably have to shed. Please advise. Thanks.

Switch to Apple if you're concerned about your data privacy. Google harvesting your data is their entire business model. Apple just wants to sell you their products.
