From memory, the official rules draw the line for offside in a VAR review at the most advanced part of the striker's body, which can legally play the ball (including to the bottom of the sleeve, on the arm). FIFA or FC25 normally follows that rule.
Also, there must be 2 opposition players in a more advanced position of the pitch, at the last touch from a team mate.
So if striker 1 shoots the ball, the keeper parries it before striker 2 scores the follow up, the goal only stands if striker 2 was in an onside position when striker 1 shoots the ball. Otherwise it is offside.
Some caveats are that it is not offside if the pass comes from an opposition player, and nor if the ball is played backwards. But these are not new rules to offside.
