I have a Mac mini (Intel) I plan to use as a server for self-hosting a couple of services for personal use and from time to time for deploying a client's demo. Which kind of firewall do you think would be best? Is it worth it investing in an independent physical firewall?

Depends. Want to learn routing and "firewalling"? Get a dedicated firewall, but a PC with Opnsense/PFsense might be a nice alternative to a dedicated firewall box.

Where do you want the bad guy to encounter the firewall?

At the edge of your network? When they reach your PC?

Put a physical one at the edge of your network and one of your device and it'll help you relax more.
